दिल्लीवासियों के लिए उत्तराखण्ड में ऋषिकेश एक पसंदीदा जगह रही है। दिल्ली के पास ये एक अच्छी सैरगाह है। ऋषिकेश में तपोवन एक ऐसी छोटी सी जगह है जहाँ हर व्यक्ति के लिए कुछ न कुछ ख़ास है। क्या आपने अपने आप को पूरी तरह थका लिया है? या फिर आप के पास बहुत से विचार हैं जिन पर आपको काम करने की ज़रूरत है? या आपको अपने मन और शरीर के बीच संतुलन बनाने की ज़रूरत है? तो ये जगह आपके लिए ही है।

तपोवन का अर्थ है एक ऐसा जंगल जहाँ आध्यात्मिक अभ्यास किया जा सके। इस जगह का नाम तपोवन महाराज के नाम पर पड़ा जिन्होंने 19वीं सदी के दौरान अपने यात्रा संस्मरणों में इस जगह का ज़िक्र किया।

बीटल्स ने किस तरह तपोवन, ऋषिकेश को प्रसिद्ध किया?

बीटल्स ने 1968 में महर्षि महेश योगी की देख-रेख में मेडिटेशन का अभ्यास करने के लिए ऋषिकेश की यात्रा की। ये आश्रम तपोवन में गंगा के किनारे था। बीटल्स को 1960 के दशक में पश्चिम में चर्चित म्यूज़िक बैंड के लिए जाना जाता है। उन की ऋषिकेश यात्रा ने इस जगह को दुनिया भर में चर्चा में ला दिया था।

महर्षि महेश योगी पश्चिम में मेडिटेशन सिखा रहे थे और उस समय 1967 में बीटल्स ने हिल्टन, लंदन में उन का लेक्चर सुना। 1967 में बीटल्स ख़राब समय का सामना कर रहे थे। उन के मैनेजर की असमय मौत हो गई थी जिस वजह से वे पहचान के संकट से गुज़र रहे थे। महर्षि महेश योगी ने उन्हें ऋषिकेश में तपोवन में अपने आश्रम में आमंत्रित किया।

बीटल्स का हर कलाकार दुनिया भर में ख़ूब पसंद किया जाता था। वे बहुत थक चुके थे। उन्होंने महर्षि महेश योगी के आश्रम में एक मेडिटेशन कैंप में शामिल होने का फ़ैसला किया।

फ़रवरी 1968 में बीटल्स ऋषिकेश में तपोवन पहुँचे। वे लगभग दो महीने पीछे पड़ने वाले प्रशंसकों और प्रैस से दूर रहे, ख़ूब आराम किया, अच्छा भोजन किया और अपने समय का बहुत आनंद उठाया।

उस समय के बाद से तपोवन भारत और विदेशों से सैलानियों को आकर्षित करने लगा। ये आध्यात्मिक अभ्यास की जगह रहा है। यहाँ माँसाहारी भोजन नहीं परोसा जाता। लगभग हर कैफ़े इस नियम का पालन करता है। पश्चिम के बहुत से कलाकार अपने विचार लिखने के लिए तपोवन आते हैं। ऋषिकेश के तपोवन में दो महीने रहने के दौरान बीटल्स ने चालीस गाने लिखे।

कैनेडा के एक लेखक, हैप्पिनेस कोच और उद्यमी Brandon Grant कहते हैं कि मैं तपोवन के माहौल और यहाँ की ऊर्जा की वजह से लिखने के लिए यहाँ आता हूँ। मेरा मानना है कि किसी भी काम के लिए माहौल बहुत मायने रखता है। ऋषिकेश में होते हुए शांत और स्पष्ट सोच बनी रहती है जो लेखन को थोड़ा आसान बना देती है।

कॉफ़ी पसंद करने वालों के लिए Divine Café & Bakery में सबसे अच्छी Cappuccino मिलती है। यहाँ के बेकरी उत्पाद ताज़े और स्वाद होते हैं। इन का नाश्ता भी अच्छा है। Ganga View Cafe साफ़-सुथरा है और यहाँ से लक्ष्मण झूले का मनोरम दृश्य दिखाई देता है। इन की दूध वाली चाय मज़ेदार है और इन की रसोई और बैठने वाली जगह भी बहुत साफ़-सुथरी है।

तपोवन में लोग सबसे ज़्यादा Beatles cafe ही जाते हैं। अनूप रावत और मिस्टर मनिंदर इसे सात-आठ लोगों के साथ मिलकर चलाते हैं। आप खाने के मेन्यू में से चाहे जो चुन लीजिए, आप निराश नहीं होंगे। यहाँ का खाना सात्विक है। सात्विक का मतलब सिर्फ़ शाकाहारी खाना ही नहीं है। खाना सकारात्मक ऊर्जा के साथ पकाया जाता है और जब आप इसे खाते हैं तब ये बात महसूस कर सकते हैं। जो लोग इस कैफ़े को चला रहे हैं उन का सैलानियों से दस साल का रिश्ता है। कैफ़े के शेफ़ को 15 साल से ज़्यादा का अनुभव है।

60s Delmar/Beatles Cafe के संस्थापक Anoop Rawat ने कहा कि हम इस कैफ़े को सिर्फ़ पैसा कमाने के लिए ही नहीं चला रहे हैं। हमारे लिए हमारा हर ग्राहक हमारे परिवार का हिस्सा है। हम ये समझते हैं कि आपकी प्लेट में सही खाना परोसना कितनी अहमियत रखता है। हमने सिर्फ़ मेन्यू में दिखाने के लिए ही खाने को इस में शामिल नहीं किया है। हम पूरा ध्यान रखते हैं कि भारतीयों और विदेशियों के हिसाब से खाने के ज़ायके में बदलाव करें।

60s Delmar/Beatles Cafe के सह-संस्थापक Maninder ने कहा कि सुबह कैफ़े खुलने का कोई निश्चित समय नहीं है। हम आमतौर पर सुबह साढ़े ग्यारह बजे अपना दिन शुरू करते हैं। सुबह से शाम तक हमारे पास बहुत ग्राहक आते हैं। इन में से बहुत से लोग बार-बार आते हैं। हर मौसम में हमें निवेशकों की तरफ़ से बहुत से प्रस्ताव मिलते हैं। वो हमें फ़्रेंचाइज़ी प्रक्रिया का हिस्सा बनाना चाहते हैं। हम उनकी मंशा की तारीफ़ करते हैं लेकिन हम ऐसे प्रस्ताव ठुकरा देते हैं।

दिल्ली के बहुत से ग्राहक कैफ़े में सब्र नहीं रख पाते क्योंकि वे यहाँ उतनी ही जल्दी भोजन चाहते हैं जितनी जल्दी उन्हें दिल्ली में मिलता है। लेकिन तपोवन के हर कैफ़े में देर से खाना परोसने की वजह खाने को दिया जाने वाला महत्त्व है। आपको यहाँ ताज़ा पका खाना मिलता है जिसे आपकी प्लेट में आने में कम से कम आधे घण्टे का समय तो लगता ही है।

“We are not running this cafe for the only purpose of making money. Every customer is an extended family to us. We understand how important it is to serve a right kind of food on your plate. We have not listed the food in the menu for the sake of listing it. We make sure to customise food based on taste buds of Indians as well as foreigners.” said Anoop Rawat, founder of 60s Delmar/Beatles Cafe.

“There is no fixed timings to open the cafe in the morning. We usually start our day by 11:30 am. Since morning to evening, we get too much of visitors. Most of them are returning visitors. In every season, we get many offers from investors. They want us to enter into franchise module. We appreciate their intentions but we turn down such offers”, said Maninder, Co-founder of 60s Delmar/Beatles Cafe.

Many visitors from Delhi lose patience at the cafe because they expect the prompt service, the way they get it at Delhi. But delay in every cafe of Tapovan is the value of their food. You get a freshly cooked food which takes more than 30 minutes to get placed on your table.
